I would like to know the CAN Protocol. So, Can anyone help me out with some basic pdfs and links where I can get enough information about CAN.

Asking for "the CAN Protocol" is like asking for the RS-232 Protocol. CAN provides the basic data transfer, like a network card. There are many protocols built on top of CAN. Like: J1939 CANopen CANKingdom and of course many roll your own ones.

That is not totally correct - Unlike RS-232, the CAN standard does in fact define a basic packet format, addressing mechanism (even tough it is not called 'addressing'), error detection, etc. For many applications that is enough; for others, the other protocols you mention provide additional features.
