Yes, in fact just today I was looking for information on how pectin interacts with alcohol. I figure since Jello shots are doable:

that somebody should come up with a recipe that uses vegetable pectin, to make jelly shots, for the "vegans". ;-)
But every web site I've found says that to test the strength of your pectin, put some alcohol in it. It will clot. If the clot is firm, it's good pectin.
But they don't say if the alcohol goes into the clot, or gets excluded from it.
Anybody know anything about that?
