Home-baked is best. People who home-cook most of of their meals hardly ever lack anything, no matter where they are. Even way out in the hinterlands there is still Muqpaurak or Bannock.

Some things we'll just have to miss. Since I grew up in Europe I really, really miss "Mettbroetchen", essentially raw minced pork meat, chopper onions and spices on a roll:

San Jose had a Dunkin Donuts.

Why move if you want to stay in California anyhow? You've got the almost perfect location. Close to Zeitgeist and other places. Of course, personally I'd prefer a location in the boonies that was really close to good mountain bike trails. Like where I am right now.

If I ever move (which I dread) it will be out of California, to get away from the socialists. My old employer took it a step further, they are moving from California to Costa Rica. Seems none of the politicos really gives a hoot about all the lost jobs.

Move to Texas, like all the other Californica companies. What did Texas get this week... Toyota to Plano, Occidental Petroleum to Houston.

Pretty soon all the people paying Californica taxes will be ordinary citizens, all the big-paying corporations will be gone.

Technically I should because I now have more clients there than in California. Huge difference to 10 years ago. The Dems can keep their heads in the sand, it won't make that fact go away that we have a serious exodus going on.

Yup, they sure did. Many voters here are naive enough to believe that fleecing the middle class and "rich people" is ok. And then those people simply ... leave.

raw pork that's a bit much, it can have some nasty parasites I guess it no worse that fish, sushi is frozen to kill the parasites

Though when I was a kid tasting the raw meat for meatballs were normal and we often had steak tartare, raw meat and egg that is practically considered an extreme sport now

Well, I've survived about 30 years of exposure :-)

Real sushi is made with fresh fish.

Steak tartar is a little less risky in terms of trichinosis which can be deadly. Of course, then there is still the fear of Kreutzfeld-Jacob or mad cow disease. It has once turned into a full-fledged paranoia here in the US, in that due to extended living in Europe I was first banned for five years as a blood donor, then for some more years and now for life. Ridiculous.

These panels are similar to what you'd see in a walk in freezer. They come in 2" and 3" thickness's, the aluminum is patterned or ripply. Mikek

I think that depends on who you ask, I saw a documentary about a very fancy sushi place in japan and the chef insisted that freezing the fish at something like -50' for a while was an important part of getting the right taste and texture

And in many places it is required

afaiu Kreutzfeld-Jacob isn't really a risk unless you eat brains and such

We need more room. After we bought our building, in the deepest trench after the dot.com crash, somebody rezoned it for 320 feet, which means a 40-story condo, a quarter of a gigabuck of building maybe. We have to sweep out the realtors' business cards every morning.

So, we hope to sell it for the dirt and move about a mile south, into an industrial-zoned area where buildings are (relatively) cheap and things are quieter. About midway between Zeitgeist and Trick Dog and Southern Pacific.

I just ignore the leftist crazies. We have to pay California taxes, of course, but otherwise the state and SF governments pretty much leave us alone. The taxes and such are offset by the (so far) appreciation of the real estate, and by the fact that the sorts of engineers and programmers that we want like to live here. We could get cheaper buildings and lower taxes in Oklahoma or somewhere, but probably not the talent. Or the food.

At least it's not New York or Dallas.

It's Waffle Houses, here. There're everywhere. When we lived in Alabama, there were 4 within a mile of each other and 7 within three, but not DDs for fifty miles. There are a few DDs here, mostly at the larger interstate exits (perhaps every third one).

Don't they all serve breakfast? All it takes is a microwave (and a stomach pump).

Many of the most successful companies have their delivery people on commission. If you find a vending machine that is chronically out of stuff, you can bet the person servicing it is paid hourly. The really successful vending companies let the drivers select the product and pay commissions.

That's mostly an urban legend. Trichinosis doesn't exist in the US pork business. I still wouldn't eat raw pork but I feel the same way about beef and I only eat sushi, well done. ;-)

The DD coffee is drinkable. Not Peets, but better than most.

We have some awful stuff here: Subway, McDonalds, Burger King, KFC, some really dreadful pizza.

Yep. They were all the rage, often going for 10x retail (see: Coors). When I first had one, some years after the frenzy, I couldn't believe how awful they were.

Five Guys. Even Steak-n-Shake is pretty good.
