I recently purchased an Onkyo TX-NR801 Receiver with 'net-tune', for
pulling in Internet radio stations (XiVA) as well as playing mp3s from
'Music Server' systems on the same network.
In order to play mp3s from systems on the network, the other systems
must be running a piece of Windows software 'Music Server'.

Does anyone know if a Linux version of this software exists?

It almost certainly does not.
It may be easys to reverse engineer the Protokoll though and or using the
tool in conjunction with wine.
Try capturing the network traffic using etherreal or ngrep.
