Looking with a scope at a video signal how do I tell which is the even and which is the odd field?

Go and find a website/book detailing the signal structure.
Now, work out if you can set your scope to only trigger on odd or even fields. It's not trivial on all/most scopes.
This is what a video waveform monitor was made for.
