Hi again all,

What does it mean when a sensor is rated at 5 microvolts per volt per mmHg

Does this mean that the sensor is susceptible to an error of 5 microvolts per volt of supply per mmHG pressure being measured? So the greater the pressure being measured the higher the error would be on it?

It sounds like the spec for a pressure sensitive resistive bridge. A bridge has a sensitivity that is proportional to the excitation voltage applied to it, and also proportional to the pressure applied to it. So the output signal is 5 microvolts times each volt of excitation applied to it, times each mm of mercury of pressure across it.
