Pretty simple, basically our universal bean recipe.

Soak the beans overnight in pretty salty water. That's an important social consideration.

Pour off the water and replace with good home-made chicken broth.

Add chopped onions, some celery, maybe some bell pepper. Fry off some smoked or anduille sausage and maybe some bacon and add that.

Simmer until beans are soft inside, 2.5 hours maybe for these.

Season with Bells, tarragon, bay leaf, black pepper, whatever you like. When it's done, turn off the heat and add a bunch of chopped garlic, and let that sit a few minutes. Cooking destroys garlic.

Serve over rice.

We also like Camellia red beans, bagged borlottis, or the fresh version, called cranberry beans here, but they are seasonal and hard to find. No need to soak the fresh ones.

Ham hocks are good in the red beans.
