Resistive touch is pretty simple and I would not be surprised if you can buy the film in rolls.

That would be ideal -- assuming (mechanically) connecting to them and ensuring adequate spacing throughout is a "solved problem". I'd been thinking SAW might be an easier technology to deploy "from scratch".
