Wow, you seem vehemently apposed to even attempting to bake bread at home. That, I don't understand.
I would not argue ovens with you. Electric ovens suck and they lack the moisture of a gas oven along with the recovery time, heat retention etc. There are some semi-professional home ovens that can make excellent bread - I can't afford one. I have had some experience baking with a large commercial Blogett baking oven, so I do know the difference.
I think you're talking about moisture when you talk about crust. Moist air transmits heat better, and retains more heat than dry air. It bakes the crust more quickly while not robbing it of moisture. The home trick of putting a pan of water in the oven just robs the oven of heat.
If I ever get one of those "as seen on TV" Scunzi steamers - I'd try piping it into my electric oven.
The French didn't invent bread, you know. Plain "Kaiser" rolls are my favorite and what I bake the most of, but I can make an "artisan" bread that surpasses most real bakeries. One doesn't play music by learning to play one note very well . . .
Crumb buns, hot cross buns, puff paste, coffee cake, etc - don't require a good oven to compete with the bakery.
One doesn't give up simply because one doesn't believe one can attain perfection. Most of the satisfaction is in the journey - the destination is secondary.
