SBC (Xscale, ARM...) and T6963C

We are looking to develop a flexible front-end to a device, and ar thinking that an SBC(sorry, I mean PC/104, I mean embedded PC, I mean CoM I mean I HATE this terminology in our field) would be a good platform. Basically it will just control GUI functions, and then instruct dedicated board what to do. We are looking at character and graphica LCDs, but I think our max resolution at this point will be 240*64 probably controlled by a T6963C. We have been looking at Xscale board (compulabs, phytec), ARM (embeddedarm), and even some offerings fro Advantech. I think WinCE will be the OS of choice (I know, I am the wors person ever). So I am wondering what the best way to control these screen will be. I assume I am relegated to writing my own driver out the GPI that these boards offer, but am wondering if there are some other commo methods? Has anyone used something similar that supports a T6963C o similar?

Rather than build, have you considered buying a standard HMI? Most of them will handle Modbus and other standard protocols. Let someone else do the interface work, especially sourcing the actual display.
