Actually the free moving bit in the middle goes upwards and entrains the bulk liquid. Nitrogen being less soluble gives nice tiny bubbles that produce that characteristic smooth head.

The logic suggests that, as the planet becomes (somehow) hotter and dryer, the deserts will catch on fire.

The problem with weather is not that it's complex, merely overly sensitive to initial conditions, which makes it chaotic, just like the solar system.
Weather is short term predictable for periods up to about a week. The compa rable period for the solar system is a few million years.
Climate is complex, but not entirely unpredictable - on most continents the re are areas where the climate has been predictable enough from year to yea r to make agriculture practical. Australia doesn't seem to have been one of them, which is why the Australian aborigines never took it up seriously.
Anthropogenic climate change is shifting weather patterns, so areas where a griculture was practical in the past may not remain so in the future.
Economics is complex, but not entirely unpredictable. George Soros and Warr en Buffett have made enough money to make it clear that some can manage use ful predictions.
Nassin Nicolas Taleb has written a couple of books about how this can work. You need a slightly more sophisticated appreciation of probability and pre diction than John Larkin can muster to follow the arguments.

Southern California gets nearly all of its scant rainfall in the winter. According, most of the fires are in the summer.
From the rain graphs, it would seem natural that years of plenty cause growth in NSW, and times of nought would fire it.
Here, we've had no decent hurricanes (or even thunderstorms) all summer, and just had the first hard frosts two weeks sooner then for the last severe winter I can remember.

all that's required is for organic material to accumulate under anaerobic conditions. Getting from peat to brown coal to black coal takes time, pressure and heat to cook out the lighter hydrocarbons (as methane, natural gas and oil).

Neither bragging nor complaining, just reporting. The innuendo (a moving target, admittedly) was that the earth is warming unduely, and extreme weather is more common as a result, including THIS YEAR. Overall, we've seen neither.

The claim is just as valid this year as it has been for the past thirty-odd years, but the noise means that you can often claim that THIS YEAR is the year that the trend is breaking.
Since this comes down to a claim that this year is the year when the laws o f physics have been repealed, it's not all that plausible, but James Arthur doesn't know much about physics, and he does know that digging up fossil c arbon and making money by selling it as fuel is the very essence of western civilisation.
