Cable shielding, signal ground and earth

Hi, I've just projected a board which has the aim of measuring the weight by reading a 6-wire load cell. This board is power supplyed by a trasforme, thus, in this moment, it is isolated from the public power net.

My questions are:

1) Where have I to connect the shield of the load cell cables? To signal ground or to earth? 2) Have I to connect the signal ground to earth? Directly? By a capacitor? 3) Waht happen If I connect the cable shield to signal groud and I don't connect the signal ground to earh?

If the shield is not carrying any signal or power currents then connect it to earth. The load cells are normally balanced wiring so signal ground may or may not be the same as earth. Without details its hard to be specific.
