It says the output current on the Backup part is:
Totalling 7.1 Amps.
Would it be possible to have to batteries in Parallel and increase the current output and/or the running time?
And if it would.... would this cause problems for the charging circuit?

Putting on more batteries in parallel will allow for longer running time during a power outage. When putting on a battery assembly with a higher current output, the charging current will also be increased. The charger in the UPS will have to be rated to support the increase. The proper solution is to get a larger UPS.
The only way to increase the output current rating of the AC output, is to have a larger inverter output stage. This would be a major re-design of the UPS.
