If your phone uses seperate bands and/or channels for data and voice, then you should presumably get two signal levels and SNR numbers. I know my LG VX8300 has two, so I thought I would check my Droid-X2.
Most of the utilities only offered a single signal level number. For example: However, when I tried some other utilities, I eventually found one that belched different numbers for CDMA (voice) and EVDO (data).

What are "percent theta" and "dBm theta"? I know what percent and dBm are... just wondering about the theta.

I tried to find an explanation in the app and on the web pile. Nothing. However, playing with the phone to get some variation in signal levels shows that theta seems to mean average.
Nice, but I was looking for head mounted devices.
I think CDMA type phones use separate voice and data channels. That is why some phones that lack band separation filters can't allow you to talk and surf the web at the same time.
