Drill a small hole for the thermocouple wire..

Hopefully, you kept the electronics of the thermometer OUTSIDE the oven.

I did calibration of a homebrew oven using a glass thermometer (Woodco M 5461 1-400F); two LM35DT; two commercial thermometers (Test Products International TPI330, Habor kitchen thermometer -50C to +300C); one thermocouple and an Omega 6100 to set oven temperature. All measured temperature within 5C of each other for settings 190C to

215C. The glass thermometer tracked the thermocouple within 2 degrees C or better.

The better toaster ovens have a fan which distributes the heat very well; i used 2 thermocouples to measure widely different places and saw not more than 0.5C difference.
