Hello it looks difficult to me choose the right processor. What does they mean with ,say, 5 pwm channel? Does it really mean that can i have 5 pin with 5 differents pwm signals at the same time?

Normally yes. Typically uC have a common timebase counter, and 5 separate compare values, for the PWM's - If in doubt,look at the SFR's
